You Will Need for Sweet Pea Cupcake:
- 3 eggs
- 1.5 cups of caster sugar
- 1 tsp of vanilla extract
- 2 cups of sweet peas that have been pureed
- 1/2 cup of olive oil
- 2 tbs lemon juice
- 2.5 cups of self raising flour
- Pinch of salt
First of all, preheat oven to 375 degrees F. Meanwhile, you can gather and prepare your ingredients.
Then crack the eggs in a large bowl and mix in the sugar. Whisk them together as well as you can.
After whisking sugar and eggs, mix in the peas, olive oil, and lemon juice. Make sure everything you added is mixed very well.
Lastly add the flour and continue to mix.
Once the mixture is mixed well, you can, therefore, transfer the mixture into waiting for cupcake molds or papers.
Cook your mixture in your preheated oven for 15 minutes.
