– Would you like to try something quite different? A very different cake recipe is one that is based on the sweet pea. If you think that the idea of a sweet pea cupcake is fairly unpalatable, then think again. Do not decide before you try it. These sweet pea cupcakes are absolutely lush to taste, easy to create and you will most certainly want to make more.

Here is an easy to follow a sweet pea cupcake recipe. The mixture should make around 20 cupcakes.

Firstly, preheat oven to 375 degrees F.

You Will Need for Sweet Pea Cupcake:

  • 3 eggs
  • 1.5 cups of caster sugar
  • 1 tsp of vanilla extract
  • 2 cups of sweet peas that have been pureed
  • 1/2 cup of olive oil
  • 2 tbs lemon juice
  • 2.5 cups of self raising flour
  • Pinch of salt

Method:


Whisk the eggs and sugar together in a large bowl. Then mix in the pureed peas, olive oil, and lemon juice.

Make sure everything is thoroughly mixed. Then add the flour and continue to mix. Once the mixture is mixed well, you can, therefore, transfer the mixture into waiting for cupcake molds or papers. Cook for 15 minutes. Cool and then add your favorite frosting.
